Hello everyone! I apologise for my absence and am grateful to have readers who still visit my blog, you're all so amazing.

I recently started drinking my tea with honey instead of sugar and i love it. Honey is healthier than regular white sugar which is a default sweetener and does nothing but sweeten. Honey not only sweetens but gives its own flavour to whatever its in. Late night tea time with my mum has become one of my favourite times of the day and we always have something sweet like a cake or cookie to go with it. So i decided to make my new favourite sweetener the star of the whole show by putting it in the pastry too. Honey muffins!




Yes it fell flat, was doughy and gooey and failed texture wish as a muffin but was absolutely delicious! As far as the texture goes, it definitely wasn't a muffin but it was something good. It reminded me of a warm porridge, very comforting. Sometimes a failed recipe might turn out to be something great and thats what happened here. The whole batch was eaten. I need to think of a different delivery method and a name for this delicious new discovery.



I had planned to top my honey muffins with honey comb but i didn't get the rise i expected from the muffins so i didn't, but i still made the honeycomb. I've seen it made before on several cooking shows and i thought i'd give it a go. It's really easy to make and quite fascinating to watch. When baking soda is added to boiling caramel, it bubbles up like a volcano about to erupt. Air bubbles are made in the candy and it sets.
